  3. نقطع الجزر بقطاعة زكزاك ونصفه بالطنجرة ونرص عليه ورق العنب الملفوف بشكل دائري ونركز الملح والحمض ونضيف نص فنجان زيت زيتون ثم ٤ كاسات ماد مغلي ونطب صحن فوقه داخل الطنجرة ثم نضع ثقل حجر خصوصي للطلخ او زيبدية بها ماد حتي مايتفتح اللفائف ونضغطه نصف ساعة بعد التصفير ونتركه بالقدر ساعة نر فع الثقل والصحن ونتر كه ساعة اواكثر مغطا ليبرد اذا تعرض للهواء يتغير لونه الى السوادثم نر صه بصحو ن التقديم ونزينه حسب الذوق والف صحة.
