1. ينقع الجريش والبرغل بماء عادي(حتى يغمر الخليط) مدة نصف ساعه. يضاف رشة ملح +رشة كمون مطحون ثم يطحن الخليط بمحضرة الطعام او مكينة فرم اللحم (اذا كانت العجينة ناشفة او ياسبة يتم اضافة القليل من الماء) حتى تكون لينة قابلة للتشكيل.
2. للحشوة. يبرش البصل ثم يحمس بالزيت قليلاً يضاف اللحم المفروم فوق البصل مع الملح وبهارات 7 حتى ينضج ثم تضاف المكسرات.
3. تشكل العجينة حسب رغبتكم. اذا كانت رغبتكم بالشكل المرفق بالصورة نأخذ كرتين متساويتين من عجينة الكبة ترق اول قطعه بشكل دائري على كيس نايلون علوي وسفلي تقص العجينة بأي شكل دائري (انا استخدمت غطاء الطنجرة)..
4. بعد فرد القطعتين وقصهم بشكل دائري يوضع خليط اللحم على اول قطعه ثم توضع فوقها القطعه الثانية وتقفل من الاطراف مع مراعاة تخريج الهواء. تقلى بزيت غزير وحار وبالعافية.
5. ويمكنكم ايضاً سلقها بالماء فيه رشة ملح +رشة بهارات.
6. ملاحظة (الجريش هو تقريباً السميد الخشن اذا لم يتوفر الجريش يمكنكم إستبداله بالسميد الخشن).
