- للعجينة ،نحطو الفرينة (طحين) في إناء غارق مع كمية الملح والسكر ونضع في الوسط حفرة ونسكب فيها الزبدة ذائبة وليست سخنى،نضيف ماء الزهر ونخلط بالأصابع ونكمل نلمها ب كمية من الماء حتى نتحصل على عجينة متماسكة وطرية.نتركها ترتاح قليلا بين زمان نخضرو الحشوة.
- للحشوة نخلط اللوز مع السكر وبشور الليمون ونلمهم بالماء الزهر حتى تتماسك وتكون مثل عجين تقريبا(آسفة لم أسطتيع تصوير المراحل لأنو عندي ضياف😞).
- نأخذ العجين ونبسطها على 3 ملم ونقصها دوائر كبيرة،ونجيب الحشوة ونكورها إلى كريات كبيرة ونحطها في الوسط ثم نشكلها إلى ثلاث أصابع ونلف عليها العجين وتكون عندنا حبة عرايش.
- ونعدلها ونحطتها في صينية لتطهى في الفرن مسخن مسبقا على 180د لمدة حوالي20د إلى30دق،عندما نخرجها من الفرن نتركها تبرد ثم نوجدلها الطلية.
- للطلية نخلط الحليب وماء الزهر والزبت ونخلطهم ثم نزيد فوقهم سكر ناعم ونخلط حتى نتحصل على خليط كثيف ونزيد قليل من الملون المرغوب فيه،ونطلي فيه حبات العرايش ونلصقلهم الوريدات وعندما تنشف نجوز عليهم بقليل من غبرة البريق..
