- اولا نبدأ بالعجينة في آنية نضع الدقيق و الطحين و الملح و نجمعها بالماء الدافئ حتى نتحصل على عجينة لينة نضعها في كيس بلاستيكي مبلل بالماء لمدة 10 دقائق ثم نقوم بدلكها بدون تقطيع و سقييها مرتين بالقليل من الماء حتى تصبح أكثر ليونة و تتمدد معنا بسهولة ندهن أيدينا بازيت و نشكل العجينة كويرات متوسطة الحجم و نتركها ترتاح.
- في هذه الأثناء نقوم بتحضير الحشو في خلاط كهربائي نقوم بفرم كل من البصل و الثوم و الطماطم ثم نضعه في مقلاة ساخنة فيها القليل من الزيت و نترك الخليط يستوي على نار متوسطة ثم نقوم بتقطيع الفلفل الحار و نضيفه ثم نضيف الطماطم المصبرة و الهريسة و التوابل و الملح و نتركه حتى يطهي و نضعه جانبا.
- اولا نضع مقلاة كبيرة على النار لتسخن جيداً ثم نقوم برش الزيت على سطح العمل و نفرد كل كويرة بشكل دائري كبير و نطوي منها الطرف العلوي و نضع الحشو و نغلق الحبة ثم نضعها في المقلاة حتى يتحمر كل طرف منها و تقدم ساخنة.
